Chicken Gobiwala


Chicken Gobiwalan, also known as Southern fried chicken, is a dish consisting of chicken pieces that have been coated with seasoned flour or batter and pan-fried, deep fried, pressure fried, or air fried. The breading adds a crisp coating or crust to the exterior of the chicken while retaining juices in the meat.



The process for this dish is straightforward. You saute onions, add a little crushed garlic, spices, saute chicken, tenderize, add cauliflower, cook till done. Then in that last five minutes you add the transformative things – the crisp julienne-d ginger, chopped scallions, minced cilantro, sliced chillies, some freshly cracked pepper and a squeeze of lemon juice to finish it off. Suddenly you’ve gone from a standard chicken dish to a truly special one.

Winter for me does not mean only the non-veg, but also those lovely greens. And cauliflower is something that is available in those 3-4 months in winter only. And, I personally believe in preparing something simple, with homely everyday ingredients. At the same time, as my son and husband are big-time meat lovers, so I tend to cook some non-veg dish every day over dinner. This dish, Gobi Chicken is prepared at my home on a regular basis.
